Basic Flaky Pie Dough

1 1/4 c. all-purpose flour
1 tbsp. sugar
1/2 tsp. kosher salt
1/2 c. cold unsalted butter
1 tbsp. white vinegar
1 tbsp. ice-cold water
- In a food processor, combine the flour, sugar, and salt. Add the butter and pulse until the mixture resembles coarse crumbs.
- Add the vinegar and 1 tablespoon of the cold water, pulsing until the dough is crumbly but holds together when squeezed (if necessary, add the remaining water, 1 teaspoon at a time). Do not overmix.
- Transfer the dough to a piece of plastic wrap and shape into a 1-inch-thick disk. Wrap tightly and refrigerate until firm, at least 1 hour and up to 2 days.
- When ready to use, on a lightly floured surface, roll out to 1/8-inch thick and cut out shapes with floured cutters. Arrange on top of the filling, brush with beaten egg, and bake until the fruit filling is tender and the top is golden brown, 60 to 75 minutes.
